How I Saved $12.75 on Gas with MasterCard & Fuel Rewards Network #FuelFamilyFun #MC

Have you heard of Fuel Rewards Network? With the Fuel Rewards Network, as we purchase groceries, go out to dinner to eat and use our MasterCard, we will save money on gas! As someone who spends almost every minute of the day thinking about how I can save money and help other people save money, this is a no brainer.

Because I shop at Winn Dixie, every time I use my Winn Dixie card that I linked to my Fuel Rewards Network, I will earn fuelperks (money off of gas purchased at Shell) when I purchased specially marked items. And, I just learned that when I link my MasterCard to my Fuel Rewards Network account and use my MasterCard at Winn Dixie, I will earn 3 cents off of every gallon of gas when I spend $100!

It was extremely easy to link my MasterCard to my Fuel Rewards Network account. I simply had to type in my MasterCard number so that when I go grocery shopping and use my MasterCard, the info will upload to my Fuel Rewards account.

We are constantly looking for ways to save money. We are in the midst of two international adoptions and it seems like every week we have a new expense related to our adoptions. Saving every penny we can is very important to us. But along with the saving, sometimes we find that we are not splurging on eating out now. And while I’m glad that I save money by cooking pretty much all of our meals at home, I decided that with all of the money I end up saving on gas because of using my MasterCard and Winn Dixie card, my hubby and I will splurge and go out to dinner.

I went to Winn Dixie armed with my Winn Dixie grocery list that I printed from www.addictedtosaving.com and coupons that I had cut out. I was planning on taking advantage of some of Winn Dixie’s sales and then also crossing items off of hubby’s wish list. Hubby is getting ready to travel to Uganda where he and the Man Up Mission Team will work with orphans, widows and men. Hubby has a list of things he needs to bring on the trip – some of the items are practical, others are not. So when I went Winn Dixie shopping, I knew that I would end up spending more money than on my typical grocery shopping trips.

Hubby needed to bring pain relievers so we took advantage of the Goody’s Extra Strength Headache Formula sale. We used a $1.00 off coupon on the Goody’s and earned $0.05 in fuelperks just for purchasing them!

Hubby also wanted to go to Africa with lots of candy to eat and give to the other team members. So, we purchased six (yes six) large bags of Peanut M&Ms.

Going through the checkout lane, I didn’t have to do anything special to take advantage of the Fuel Rewards. I gave my Winn Dixie card which is connect to my Fuel Rewards Network account. This insured that I received all of the sale prices and that I also would earn fuelperks on the specially marked deals. Next I handed my pile of coupons.  I then paid with my MasterCard. This earned me $0.03 off a gallon because we spend over $100.00.

When all was said and done, we earned $0.85 in fuelperks while shopping at Winn Dixie and using our MasterCard. Since our car takes 15 gallons of gas, this will save us $12.75 when we get gas at Shell! I decided that each month, I would add up the savings and hubby and I would treat ourselves to a dinner out! If we save $12.75 twice a month, that is $25.50 that we can apply towards a dinner out! Or, if we save up two months worth of savings, we can spend $50.00 on a night out! That should get us a great dinner out!

Have you tried Tyson “Grilled and Ready” Chicken? I was given the opportunity to cook with Tyson “Grilled and Ready” chicken and to create a simple and yet healthy meal. I jumped at the challenge. Very seldom do I follow recipes 100%. In fact, when I have free time, one of my favorite things to do is to experiment and create healthier recipes in the kitchen.  Eating and living healthy is important to my family so simple, fresh and healthy meals are a pivotal part of our lives.

To prepare for this challenge, I headed to Walmart to purchase Tyson “Grilled and Ready” frozen chicken. I was impressed by the vast variety to choose from both in the refrigerated and frozen food sections. I opted to purchase the Tyson Fully Cooked Frozen Chicken Breast Fillets. I wanted to purchase full chicken breast fillets (versus chicken strips) because the fillets would be more versatile with my meal.

Once I headed home, I started thinking about an easy and yet healthy and summery meal I could create using my chicken. I decided to make Chicken with Lemon & Asparagus Rice. I know that both lemon and asparagus are plentiful in the summer and their flavors along with grilled chicken and rice would create a tasty and yet well rounded meal.

I gathered my ingredients for my meal. I prepared this recipe two ways – once with brown rice and once with whole grain orzo. My recipe below will be the same whether you use orzo or rice. If you are gluten free, make sure you use rice as orzo is actually a pasta and it includes gluten. (My pictures in this post show the orzo.)

This recipe does not involve too much prep work. The most work you will have to do is chop your asparagus, onion, peppers and lemon. And while you are chopping, preheat the oven to 375 for your chicken. Once your oven is preheated, pop a cookie tray with your chicken into the oven.

Meanwhile, start sautéing your onion and peppers. Then, add your rice (or risotto) and toast the grains until they turn a little brighter in color. Add the water, butter and lemon and then simmer until it is cooked. Once it is finished, add your asparagus and a little salt and pepper to taste. Garnish with cilantro, and it is done!

Once the chicken was finished cooking, I decided to chop the chicken into strips. However, you can keep the chicken in fillets as well. This is entirely up to you. I topped the Lemon & Asparagus Rice with the cut chicken strips.

This meal came out excellent. The Tyson “Grilled and Ready” Chicken was moist and it was perfectly seasoned and tasted like it had been grilled and not baked in my oven. The chicken went perfectly with the lemon asparagus rice. The lemony flavor was not overpowering and gave the meal a much lighter flavor. This was a perfectly well rounded meal in that it has the protein from the chicken, carbs from the rice or risotto and vitamins and nutrients from the asparagus and peppers. This was a hit in my house!

Chicken with Lemon & Asparagus Rice Recipe

Ingredients
1 T olive oil
½ Onion Diced (approximately ½ a cup)
1 cup Peppers Diced (I used a combination of red, yellow and orange peppers)
1 1/2 cups Rice or Risotto
3 cups water
2 tablespoons unsalted butter
2 lemon slice (1 inch thick)
Lemon Zest
1 lb fresh asparagus (cut into thirds)
Salt & Pepper
Cilantro (for garnish)

Directions
1) Heat the oil in a saucepan. Saute onion and peppers until softened.
2) Add rice and toast for a couple of minutes.
3) Add water, butter and lemon slices and zest. Bring to a boil.
4) Reduce heat, simmer on low for approximately 25 minutes
5) In a separate pot (I often use a deep frying pan) steam asparagus in just a little water until the asparagus turns a brighter shade of green. (Approximately 4 minutes)
6) Drain asparagus once it is cooked.
7) When rice is completed cooking, season with salt & pepper, add cooked asparagus and garnish with cilantro.
8) Top rice with grilled chicken.
9) Enjoy!
